APNewsBreak: Atty. doubted Anthony's mental ... - Health and Fitness


ORLANDO, Fla. ? The Florida mother who was acquitted last year of murdering her 2-year-old daughter had mental health issues that contributed to her habitual lying, the lead attorney in her criminal case says in a new book.

In ?Presumed Guilty, Casey Anthony: The Inside Story,? Jose Baez said detectives should have realized Casey Anthony had built a ?fantasy world,? and her lies weren?t evidence of guilt but signs of someone with ?serious mental health issues.?

The book is scheduled to be released July 3. The Associated Press purchased a copy Tuesday.

Anthony is serving probation for an unrelated charged at an undisclosed location in Florida and couldn?t be reached for comment Tuesday.

Describing how Anthony led detectives on a wild goose chase, even taking them to Universal Studios where she falsely claimed she had a job, Baez writes, detectives ?should have stopped and realized, ?Wait a minute, we?re not dealing with someone who is playing with a full deck.??

Anthony originally told detectives that her daughter, Caylee, was taken by a babysitter in June 2008, and that she didn?t report her missing for more than a month because she was searching for the toddler on her own. During Anthony?s trial last year, Baez argued that the little girl accidentally drowned in the family swimming pool and that Anthony panicked and hid the body because of the traumatic effects of being sexually abused by her father.

George Anthony denied the defense?s allegations that he abused Casey and helped her cover up Caylee?s death.

Prosecutors had contended that Anthony suffocated Caylee with duct tape because she wanted to be free to hit the nightclubs and spend time with her boyfriend. Jurors acquitted Anthony of first-degree murder but convicted her of four misdemeanor counts of lying to investigators.

Baez repeats the allegations of sexual abuse in greater detail in the book, saying it contributed to Anthony?s mental health issues. Mark Lippman, an attorney for George Anthony, refused to comment on the book Tuesday because he hadn?t read it.

Baez takes aim at the reporters who covered the case, detectives who investigated it, ?groupies? who attached themselves to it and the case?s original judge who Baez says filed a complaint against him with the Florida Bar. The complaint was later dropped.

The three-year case took an emotional toll on Baez, according to his book. He suffered depression after the complaint was filed against him and he found it difficult to find joy in his wife?s pregnancy.

Baez also criticizes the way he was portrayed in the media as an inexperienced attorney taking on one of the highest-profile criminal cases in recent memory.

?The public may have been convinced that I was an idiot but I let it all roll off my back,? he writes

Kosher cheeses from around the world can be impossible to find. Just try to locate a hekhshered English Lancashire, Greek Halloumi, Spanish Cabrales, or triple cr?me from France and you will be utterly disappointed. For American home cooks, or even professional chefs, this can put a halt to some recipes that delve into the cultures of faraway places that could intrigue and delight one?s family, friends, or clientele. Cheese is an integral part of many country?s cuisines and something that had been made at home for centuries. While some varieties require a few specialty ingredients and long tedious processes, others can be produced very simply in under a few hours without much supervision ? a superb way for the home chef to add a bit authenticity to a regional recipe while still sticking within kosher confines.

Indian cuisine can be prepared best as a dairy meal, the main reason for this being the consistent use of ghee (clarified butter). This key ingredient is easily made at home by slowly heating a desired amount of butter in a saucepan and ladling off the milk solids that rise to the top. You are then left with a translucent yellowish cooking oil that is great for anything from simmering to saut?ing at high heats. Without the milk solids, the clarified butter has a higher smoke point, but still maintains a rich flavor. Ghee is used in many traditional recipes and adds richness to vegetarian dishes such as dahl makhani, lentils cooked in a garlicky, buttery sauce, and chana masala, chickpeas simmered in a spicy tomato & onion base. Another ingredient that will generously diversify your Indian recipe repertoire is paneer, a traditional Indian cheese that can be made at home with only two ingredients. Paneer, with its versatile mild flavor, can be used in many ways ? appetizers, main course, and desserts

Making paneer at home is easy and all you will need is a half-gallon of whole milk (preferable raw or non-homogenized), ? cup of lemon juice (fresh squeezed is best) and a large piece of muslin cheesecloth which you can buy at most supermarkets. Heat the whole milk in a heavy bottomed saucepan over medium heat, gently stirring occasionally. Mix the lemon juice with ? cup warm water and add gradually to the milk as it reaches a rolling boil. As you stir in the lemon juice, the curds will separate from the whey and you can turn off the heat at this point. Slowly strain the mixture through a sieve lined with muslin cheesecloth over the sink. Rinse your curds with cool water and then wrap tightly in the cloth and squeeze out excess liquids. Then place the wrapped curds underneath a heavy pan to press out more whey for one to two hours. If you would like to use the cheese for a main dish, you can opt to knead the curds a bit before pressing them which will help the curds to knit together more for a tofu-like texture and result.

I have used this homemade cheese to make traditional Indian dishes such as palak paneer and paneer kofta, the latter being a great vegetarian substitute for meatballs in a mild curry sauce. I also think this mild cheese can forge it?s way into some considerably more traditional ?Jewish? recipes as well ? try it grilled or griddled with cabbage in a sweet and sour tomato sauce, sliced thin, breaded, and fried for a vegetarian schnitzel, or in place of cottage cheese in your favorite savory or sweet dairy recipes.

Meanwhile, in the western hemisphere, a very similar cheese is being made in households all over the Americas. Queso Fresco, originally from Mexico, is a fresh, mild, and versatile cheese can add protein to salads or cut the spice of a chile spiked salsa. The ingredients are almost identical to paneer, except you can use lime juice or vinegar instead of lemon juice. Starting the cheese making process for queso fresco is the same ? heat a half gallon of whole milk slowly in a heavy bottomed saucepan until almost boiling (but not boiling!) and add the acidic counterpart, either ? cup lime juice or 1/8 cup white vinegar, and watch the curds separate. Continue to let it simmer for a few minutes, and then strain through muslin cheesecloth. Sprinkle the cheese with a pinch or two of salt, or any other seasonings you?d like ? perhaps chile powder, pepper, cumin, or fresh cilantro. Tie the ends of the cloth together and let it hang for at least four hours and as long as overnight, if you can wait that long to devour it.

Yes, kosher cheese can be elusive but if you try making these simple regional versions of ?cottage? or ?farmers? cheese you might be surprised at how easy it is to keep it kosher and still explore cuisine from around the globe.

MI5 chief talks threats before Olympics

(AP) ? Britain has seen a credible terrorist attack plot about once a year since the Sept.11 attacks ? a worrying pattern as security officials brace for an array of threats ahead of next month's summer Olympics, the head of the country's domestic spy agency says.

Although Britain's threat level is a notch below what it has been for much of the past decade, it is still at substantial. The level means an attack is a strong possibility,

"Our assessment is that Britain has experienced a credible terrorist attack plot about once a year since 9/11," MI5's Director General Jonathan Evans said in prepared remarks ahead of a rare public speech Monday to the Lord Mayor's annual defense and security lecture in London.

"The (Olympic) games present an attractive target for our enemies and they will be at the center of the world's attention in a month or so," he said. "But the games are not an easy target, and the fact that we have disrupted multiple terrorist plots here and abroad in recent years demonstrates that the UK as a whole is not an easy target for terrorism."

Not so long ago, 75 percent of the terror threats prioritized by MI5 had links to Afghanistan or Pakistan. But Britain's efforts, along with those of its international partners, has brought that percentage down to below 50 percent, Evans said.

"You could say that we are near to reaching a form of stalemate," said Evans. "They haven't stopped trying but we have got better at stopping them."

But the terrorist threat is also widening to include al-Qaida affiliates in Mali, Yemen, Somalia and parts of the Middle East, he noted.

Although the Arab Spring revolutions have brought about radical political changes in some countries, they have also brought fresh opportunities for al-Qaida affiliates to seek refuge.

"Some are heading home to the Arab world again," Evans said. "And a small number of British would-be jihadis are also making their way to Arab countries to seek training and opportunities for militant activity, as they do in Somalia and Yemen. Some will return to the UK and pose a threat here. This is a new and worrying development."

MI5 has grown since the 2001 terror attacks in the United States, going from 1,800 to 3,800 staff ? some of whom joined after Britain's own homegrown suicide bombings that killed 52 people in 2005.

Since then, several international terror plots have been hatched in the United Kingdom, including the 2006 trans-Atlantic airliner plot to down several planes using liquid explosives. A handful of terror trials are also underway.

Evans stressed that other countries, such as Iran, shouldn't be underestimated in the evolving terror threat landscape.

"We have seen in recent months a series of attempted terrorist plots against Israeli interests in India, Azerbaijan and elsewhere," he said. "So a return to state-sponsored terrorism by Iran or its associates, such as Hezbollah, cannot be ruled out as pressure on the Iranian leadership increases."

And the threat of cyber security has recently become more prominent, he said.

In one recent case, a major London-listed company incurred revenue losses of 800 million pounds ($1.2 billion) because of a cyber attack, Evans said. He did not elaborate on the company's name or what country was behind the attack.

"What is at stake is not just our government secrets but also the safety and security of our infrastructure, the intellectual property that underpins our future prosperity and the commercially sensitive information that is the lifeblood of our companies and corporations," he said.

Evans has been in charge of MI5 since 2007.
